Avallen creates bar training programme

B Corp-certified Calvados brand Avallen has developed an eight-point training programme for the bar industry to boost sustainability.

The Calvados brand’s training programme, for bar owners and bar staff, focuses on people, the planet and profit.

Avallen co-founder Stephanie Jordan said: “There’s plenty of fun and community in this sustainability-leading training initiative, all in the fiercely trailblazing style of Avallen.

“Who doesn’t want to believe in a Wakanda-style paradise where tech and nature harmonise, over a desolate post-apocalyptic Mad Max? Who doesn’t want to hear how happier bar staff do way more than mix cocktails and spread the joy that will ultimately save us?”

The eight-point programme covers matters including: biodiversity, and how spirits can be made using waste products and more; size, and how suppliers should use large, refillable containers and closed-loop systems; practical ways to store ice; and cutting waste.

Leon Wilkes Back, head of mixology at Virgin Hotel Edinburgh, said: “The Avallen sustainability training was a whole new type of brand training, and gave our team great understanding and increased motivation on how to take meaningful action on sustainability both at work and in our personal lives.

“It makes you think about the impact you have on our planet everyday and how our industry could be a real vector of change when it comes to sustainability.”

Earlier this month, Avallen added Canadian bartender Kaitlin Wilkes Back and brand builder Julian Kirk to its team.

In August 2022, Avallen published its second report on the company’s annual environmental impact.
