The “EmbezzleMint” is a sublime libation channeling the cool mint vibe with the fresh essence of cucumber and lime. This cocktail packs a powerful taste-twist with a splash of Cointreau, making it one of the team’s favorites.

Glass:

Martini

Ingredients:

2 oz felənē®vodka

2 medium-sized cucumbers

1/4 oz simple syrup (substitute 1/2 teaspoon sugar)

1 lime (juiced or substitute 1 tablespoon prepared lime juice)

1/2 oz Cointreau

1/4 cup mint leaves (to taste)

Small ice cubes

Mixology

Peel, quarter and de-seed one cucumber. Then, chop or dice into uniform-sized pieces and puree in food processor. Strain pureed cucumber in a fine metal mesh strainer, extracting as much cucumber juice as possible.

Fill your cocktail shaker with ice. Add mint, simple syrup (sugar), lime juice and shake. Add 1-1/2 oz cucumber juice, the vodka, and Cointreau, and shake. Strain into martini glass.

Garnish

Using a potato peeler, shave thin strips from the remaining cucumber lengthwise from end-to-end (leaving the skin on). Fold two strips of cucumber gently into an accordion shape and skewer with a toothpick and rest on the edge of the martini glass
