Dram London debuts new menu

Soho cocktail bar Dram has created a menu focused on ‘the singularity of different seasonal fruits, vegetables and herbs’.

The new menu comprises 20 cocktails, which will be split in the bar’s different areas. The ground-floor bar and terrace offers ‘refreshing and light cocktails’ on tap, including Cucumber, which blends palo santo with The Botanist gin and its eponymous vegetable, and Sanso, which combines black lime, Ramsbury vodka and celery.

The basement bar will offer nine new cocktails that showcase the ‘complexity of singular ingredients’. The Cherry cocktail combines tart cherries, chilli, Tanqueray No. Ten gin and Empirical Soka. Banana Wine pairs banana with Brugal 1888 and fino Sherry, while Mango Skin blends mango with Cognac, coffee and Craigellachie 13 Scotch whisky.

Co-founders Chris Tanner, Martyn ‘Simo’ Simpson and Jack Wallis, have also created their own range of ready-to-drink (RTD) cocktails to be stocked in the bar’s vending machine. The five core expressions are available in 250ml cans.

Maple is a twist on an Old Fashioned that blends maple syrup with Westland American single malt. The remaining four drinks are Highballs: Cointreau with mandarin soda; St-Rémy brandy with peach soda; The Botanist Gin with rhubarb soda; and the Hi-ball, Dram’s signature drink, which blends Islay single malt Bruichladdich with soda water.

Dram opened in November 2023 in a three-storey building. The site offers two bars, a whisky shop, an outdoor terrace and a private pool room.
